A whole steer typically yields 850-950 pounds of hanging carcass weight HCW and 500-650 pounds of packaged meat. A whole will fill two upright freezers. Our cut sheet enables you to specify exactly how your two sides of beef should be cut up.
Our Custom Whole is a whole steer that is first dry aged 14 in our butcher’s cooler. (Aging 21 days dry aging option is available for an additional charge).
