Description
A half typically yields 425-475 pounds of hanging carcass weight (HCW) and 240-325 pounds of packaged meat. A half will fill a 20 cubic foot freezer. Our cut sheet enables you to specify exactly how your side of beef should be cut up.
Our Custom Half is cut from a half side of beef that is first dry aged 14 days in our butcher’s cooler. (Aging 21 days dry aging option is available for an additional charge).
