Description
We sell two grades of beef.
- The highest quality of beef would grade prime and is defined as having slightly abundant to abundant marbling. This is typically sold in the nicest steak restaurants.
- The other is high quality would grade choice and is defined as less marbling than discussed above but still better than most of what the grocery stores sell.. These too are very tender, juicy, and flavorful. This grade is a lower cost alternative to the higher grade of beef discussed above.
Estimates for the half beef is as follows:
An important detail to keep in mind is that are steers range in size from 1,400 to 1,600 pounds, or more. The heavier ones are more expensive, but yield more meat, thus, our customers do not pay more per pound. We try to pick out the biggest steers, however, if our customers would prefer on the smaller end of the scale, please specify and we will make it happen.

The high-quality beef yields the following weights with the following estimates of cost.
